Pancakes / Drop Scones

8oz ( 200g) Self Raising Flour

1/2 teaspoon of salt

1/2 teaspoon of Baking Powder

1 1/2 Tablespoons Your favourite sugar ( or Honey)

2 Eggs


Place all ingredients  down to the eggs in a bowl. Beat 2 Eggs together with 1/2 coffee mug of milk. Beat the liquid into the dry ingredients. Continue to add Milk a little at a time until you have the consistency of thick yoghurt and air bubbles are starting to rise through your mixture.

Heat a thick bottomed frying pan to a medium heat and wipe with a little butter/oil on a piece of scrunched up baking paper (not paper towel, it sticks to the pan) use a ladle or a jug and pour 3inch discs of batter leave until bubbled on top and golden on the bottom. About 1 minute, then turn and repeat on the other side.

Remove from the pan and keep inside the folds of a clean tea towel, until cool enough to eat.
